The Society & Guild is a membership only education cooperative, focusing on the excellence in food and beverage.
The following is our Gastronomist’s Creed:
- Reverence: To not consume inferior victuals and libations but to seek gratifying provisions and furthermore to not abase their natural state of quality by needlessly meddling or molesting them with ill-conceived and supercilious preparations.
- Deference: To things taken from the earth, to protein rendered for our benefit and to the relief in satiation of thirst. Additionally, to those who grew, gleaned and tendered those scrumptious gifts.
- Education: To trust yourself enough to learn. To learn by doing. To understand that knowledge by teaching someone else.
- Economy: Of the wallet and cupboard space. To abstain from purchasing plasticy, overpriced, gimmicky kitchenware apparatuses and/or doohickeys.
- : Conservation: To abhor waste. Until there is not one who hungers among us, the least we pledge is not squander our abundance. Conversely, to repulsed by excess for the sake of gastronomic gluttony alone.
- Celebration: Of the integrity of a well prepared meal, the communal act of dining, the renewing process of theory with the joviality in the practice of cooking.
- Delegations of Duties: If you cook, it is true you don’t have to do the dishes, with ONE caveat: do not use every dish in the house. To those who are designated to do the dishes, yes, you must put things back where they belong.

Class Details
A down to earth, essential class for both the beginner and the advanced palate. This class is about you and how you find your own perfect wine and food pairings.
We will work with you in reveling in the interaction of food and wine and how to make a $10 bottle taste like a $100 and not the other way around.
Throughout the evening, we will work our way through each course and wine flight to discover the individual complexities of the pairings.
You will learn the structure, texture and flavor of wine and how to match contrasting or similar notes of each dish and guide you to your own personal taste profiles.
Wine Instructor Kyle Bille
The training Kyle has received is 95% on the job. "I learn by doing and wanting to do, and that's got me this far." he says. Working for only small family businesses in many business sectors.
Kyle moved to town in 1998 to take the Computer Networking program at Brown Institute landed a job right away as a computer technician renting all over the state of Minnesota and a number of select cities. After being laid off in 2002 and not having a plan, Kyle took a job at North Country Coop as the assistant to the bulk buyer. From there went on to be a Production Manager for a local catering company, where he helped develop a monthly wine series and began to understand what the adult perfect bite is all about.
Holding all but the very highest positions like executive chef and ownership at all of his past jobs, Kyle has also worked as a security guard, bar back and tender, dishwasher, prep cook, grill cook, sauté cook, pastry an artist assistant, demolition, construction, building maintenance, server, assistant, manual writer and Garde manger.
Kyle studied wine at the International Sommelier Guild, receiving his certificate in wine fundamentals and began purchasing wine, conducting full staff trainings, building wine lists, tasting notes for menu's, chef's table and tasting menu wine pairings as a Beverage Director and Maître d'' for a 4 star restaurant.
Growing up understanding what the perfect bite is all about and that everything has its place, Kyle brings that to every class. Kyle has worked at the very high end restaurant's to the very low end and takes a different style and approach to educating wine, "There are no rules, just some things most people may not do, and the rest of them, they're snobs."
